I don't think it matters if a guy gets to his final numbers via very consistent production versus high deviation between hot and cold months. So if consistency for Mountcastle means higher valleys but with lower peaks, I'm not sure I really want that. If consistency just means to try to avoid or limit the depth of the valleys while maintaining the peaks, then that is obviously a good thing.
I think the better your offense is overall, the more you can benefit from a streaky hitter. You have the depth to cover for the cold spells and still be a productive offense overall, and then when the guy is dialed in they can really carry your offense. Orioles offense currently is dangerously shallow overall, but I hope that it isn't always that way.
I was very happy with Mountcastle's plate discipline this year. The strikeout and walk numbers overall are quite bad as you point out, but he walked way more often than I was expecting given his minor league track record. I don't expect any further improvement, would be happy just to maintain, but he has already shown that improvement so maybe he can continue.

I know he struck out a lot last year but he seems to be doing it more this year.
Disappointed so far.
You're right, 27.6% this year vs 27.5% last year
Main problem seems to be his walks are way down and he has no power this year. He's certainly struggling.

In June, the Barrels leaderboard goes Giancarlo Stanton (duh, he’s the Barrel god), Kyle Schwarber, Shohei Ohtani, Aaron Judge (double-duh), and then … Ryan Mountcastle! He hit seven homers and 11 doubles in June and his .297/.345/.614 line is enough to make you wonder if there’s just one more gear left for the 25-year-old. Could he ever hit .300 with 40+ homers? And even if he doesn’t, this is enough to believe in him as the bedrock for that Orioles lineup for years to come, right?
Maybe. The unfortunate truth is that he has an inconsistent approach at the plate and swings at too many balls. Right now, only six players are chasing pitches outside the zone at a higher rate. He did cut that rate for a bit, and that might have led to this incredible June, but as you can see from this rolling graph at FanGraphs, the chasing is creeping back in even as we speak.
Even last year, Mountcastle had a period where he chased less and that led to peak production, and then he reached more and lost the touch at the plate. Contact on pitches outside the zone is sub-optimal in terms of results and also ages poorly. This might just be part of what you’d call a hot streak, even if the batted ball quality backs up the slugging percentage.
