Was just talking to someone and they said NO can be pretty shady looking, dirty, crime, etc....Thoughts?

Been a long time, but New Orleans is the best one of those by far.
QFT.
You can do several NOLA trips before it's time for the others... nothing against the others, they're all fine... but NOLA is more special than any US place except NYC....

Its a city, there is always some crime somewhere. You'll be in touristy areas and won't have any problems. Best city I've been to in America and maybe worldwide. Don't let anyone talk you out of it.
It's going to be tough to top Vegas for me, especially since I don't really care about music and don't like jazz.
But I can't wait to see if I get a new favorite.

It's going to be tough to top Vegas for me, especially since I don't really care about music and don't like jazz.
But I can't wait to see if I get a new favorite.
I don't really listen to jazz in my free time, but absolutely loved checking out live jazz in New Orleans. You have to at least give it a shot, and pick one of the better places to do that. I can give you tips there since I went and saw live music each of the 6 or so nights I was there. Of course the locals can probably give you better advice.
To me, the experience was amazing even if for the most part it wasn't music I would listen to in my car or stream much, if at all.

Also, even if it doesn't top Vegas, there's something to be said for exploring a new destination.
Without knowing how much your wife is into Vegas, I'd also say that New Orleans is probably the better city for couples (especially if you aren't being joined by other couples) while Vegas is more ideal for going with some buddies (NOLA is great for that too).
They have at least one casino as well.

Bourbon St is seedy at night in some ways, but very crowded and I'd say safe since it's such a tourist attraction.
There's plenty to do off Bourbon though and I didn't have issues walking around.

Like I said, you don't have to be into jazz to enjoy it.
But it seems like you may be exceptionally indifferent to music, if that's the case, then it certainly takes away from some of the appeal.
Have you been to / considered Miami?

No...I haven't been there. Wouldn't mind it but I would go to SD first.
My wife has been to Miami and enjoyed it.

Highly recommend both cities.
Miami would be the shorter and cheaper flight though, which you'd probably want to consider since this would basically just be a long weekend trip.

We have a lot of points, so our flights will either be free or very little money, so that's not our concern.

OK. I'm not really a fan of 11 hours of flight time for 3 full days of being somewhere. Personal preference of course.

Some of the best music I've heard was in NOLA from guys sitting in doorways and playing whatever you wanted at 3am...

And we're not talking about Benny Goodman big band era jazz music. You can find that, or little quartets playing old jazz classics at a swanky cocktail bar, but if you go down to Frenchman Street to the great bars there that always have live music, it's much more like rock or funk or soul or country with a brass backing. Like the Cats Eye in Fells Point but to a far greater, and better, degree.
I don't quite understand what it means to not be a music person, but I guarantee you can find something you'll actively enjoy and not just are interested to observe as a cultural phenomenon. And without much effort in the looking, as well. Especially during Jazzfest, you don't have to go to the festival, lots of the musicians will play after-shows at various bars and venues. I've never been for Jazzfest, but I would love to go.
